Summer is in full swing and that means endless hot days lounging by the pool! Yesterday we had a late celebration for Nick’s 30th birthday at his parents’ pool with great friends and family, delicious food and a few spirited libations. 🙂
One of the drinks we sipped on poolside was this crisp, refreshing, Skinny Mojito. It’s a double win when you find a tasty drink that’s also kind on the waistline! This super simple drink is made a little more “diet friendly” by using club soda and your favorite low-cal sweetener. I opted for Sweet and Low, because it’s what I grew up with so I’m not too keen on the other options. However you could use Splenda, Truvia, or whatever you prefer!
- 4 oz. club soda
- 1 oz white rum
- Mint leaves
- 1 packet low-calorie sweetener
- 1 lime wedge
- In a cocktail shaker, add 1 oz. white rum and 5 mint leaves. With a muddler or the back of a wooden spoon, crush the mint leaves until they are well incorporated into the rum. Add 4 oz. club soda, sweetener, and a handful of ice to the shaker. Squeeze the lime wedge into the shaker and shake a few times.
- Don't be shy, really put some muscle into it!
- Pour into a glass and garnish with a sprig of mint leaves and a lime.
